Ardent Mills is expanding its processing capabilities at its Denver flour mill. As more farmers are looking to bring specialty grains to market, and Ardent is seeing greater demand from its customers, the company will now be able to clean and pack intact grains, pearl barley, and will dehull heirloom grains such as emmer, einkorn, and spelt.
The mill, which has a daily milling capacity of 5,000 cwt, is one of two Ardent mills in Denver. As demand climbs from artisan bakers, brewing and distilling companies, food service, and retailers, the company will produce and clean organic and non-GMO grains at the site for sale nationwide. Production at the certified organic mill also will support The Annex by Ardent Mills, a unit established last year to foster the future of specialty grains and plant-based ingredients.
Ardent announced this project directly on the heels of its announced plans to close four of its 39 mills in North America and Puerto Rico, including plants in Macon, Georgia; Rush City, Minnesota; Loudonville, Ohio; and Red Lion, Pennsylvania.
